#nrksalme

I have great difficulty to explain how much I like the salmemaraton.
Before I had found the idea of sakte -TV (= slow TV) a bit strange but hell! (is this appropriate?) this time I find myself SO hooked!!! I love it so much!

Sakte - TV is a unique norwegian concept of broadcasting directly and for days an ongoing activity. A ship in route, knitting and now singing the whole psalm book.   (More on projects check here)

I made a horrible amount of jokes on this before but this time I'm totally in love with it!
I find the idea of uniting the choirs of the country under the same project wonderful!! People of all ages and different places connecting through beautiful music and soul touching lyrics! So idealistic that the hopeless romantic in me is in ecstasy!!

Norwegian ads

Commercials!! I love them!  
Not all of them, of course, but the clever ones, the ones who manage to make you laugh or feel something within their limited seconds. Oh, yes, and those that mark it's time to switch off the TV because the ad interrupting gives you more pleasure than the program you're watching! 
I consider it a form of art.  A very oriented art clearly but still.The template is so limited in time and often in budget and there are so many limitations in what is appropriate content that makes it a real challenge. So I have a lot of respect for the advertisers who manage to move me. 

I have no great input of norwegian ads as I consciously don't have a TV. NRK, that I watch online has no ads so until youtube started this annoying habit, I had had almost zero input.
But it's a great achievement to attract the attention within 3 or 5 sec before the skip is activated.
The three following ones are big winners! Not only managed this but made me watch them again and again!






But a post about norwegian ads would be incomplete if the absolute epic ad of DnB was not included!

Mission completed! I was advised to include ads in my blog! So there you have it! :P :P 

This post will be updated as soon as I come across any other clip that passes the challenge of the 3sec. :D So work hard advertisers!! The fame being included in this blog will follow you through out your career as the biggest credit of all! :P :-)

A useful post

These days I feel I want to give back to society.
A contribution of some sort.
So I decided to share the things which make my life better, easier and keep me safe.


  1. Shoe spikes. The only possible way to survive walking on ice unless your skating/ skiing skills are really good.
  2. Tran oil. Whatever you have heard of its mood boosting properties is absolutely true. I'm the living example! Increase the dosage gradually until it has an effect within two three days. Ask your doctor if you are afraid, from what I know it is pretty safe up to a ridiculous amount. For me the magic number is two big spoons per day. 
  3. Woolen socks. Well this is one of the first advice you get when you arrive in Norway but still I have to include it here.
  4. Silk undershirt. Woolen is also good but not if you suffer from acne.
  5. Salad spinner. The leafy greens here are too sensitive to wash them long before consumption and let them dry.
  6. Wake up lamp. Nothing ever will replace the natural morning light but it is at least something!
  7. And in general lots of lamps. I haven't tried the special lamp which is supposed to help you with seasonal blues. But it is in my wish list for this winter. 
  8. Genuine leather shoes. Never ever buy leatherette even if the insulation looks super warm. 
  9. Backpack for everyday. No, seriously, you really need your hands free to keep your balance walking on ice or extent them when you fall- because you surely will.
  10. Exercise. Pause. Yes, I know it is not an item and you might hate it. But keeps your body warm, lifts your mood, do you good. Choose something fun said a very dedicated former coach potato! ;-)
I really take my vows on these items! :)

When feelings are too intense to hide...

This week the kammermusikkfestival (chamber music festival) is running in Trondheim. 
Mekatonia II was a very very impressive show. Certainly deserves all the attention it got.  It made people standing in the rain haunted by the beautiful music and the industrial and acrobatic performance. Super cool combination! 

But what I wanted to write about is related to the opening concert at Nidarosdomen.  The concert was chanting. The interior of the church brilliantly illuminated, great musicians on stage, the new organ with its massive structure dominating and beautiful music was comforting our souls.
I couldn't ask for more! 
I very often feel culturally hungry in Trondheim. Maybe it is me, maybe the city indeed has a limited offer on this kind of events, maybe both. Anyway, on Tuesday I returned home and I had a very satisfied look. One of those that it's impossible to hide.

This is the deal with pure and genuine feelings. They are there, demanding to experience them to the bone, escaping from the control mechanisms of our serious selves. I find it wonderful, contagious and a pity that we force ourselves so much to be cool and proper. 

One of the things I loved about the concert is a bit unusual. There was this guy of Det norske solistkor so very excited being there and signing that he was making a tremendous effort to stop smiling. Even when he was managing to be serious his eyes were betraying him! He had to be professional, to focus on his signing and certainly he was trying hard for it! But for me it was so refreshing to see someone so excited and present! & It was so moving to see his struggle to collect himself!

It resonated with me. I'm often too enthusiastic and I have to behave. 
So I really thank him for seeing this. 
Every time I think about his hardship, I smile, thinking I'm not alone. ;)

A dip in the lake.

With good weather the perfect activity is to reach a lake and have a dip into it!
With bad weather the perfect activity is to make a post about it! :)

I'm a bit over with barbecue lately. It makes little sense to light a fire when it's so warm and to get smoked on top of sunburned but then again lately I don't fancy coffee either so probably this explains a lot... At least I haven't lost my appetite for sommerkoteletter!!! Then I would be seriously worried! ;)

A picnic with fruits, nuts and chocolate is an excellent alternative! Highly recommended!
Haukvatnet is an absolute favourite!
I really enjoyed swimming there. The water was a bit cold at first but soon enough it got very comfortable!



I'm so looking forward to more beautiful summer days! :)

My lovely rainbow people! :-)

Rainbows are fantastic!
Show me someone who is indifferent in the magic of them and I'll show you a poor lost soul!
I was raised with a fairy tale about a boy who had got a piece of a rainbow. The materialized rainbow could heal and make happy everyone. His kind heart obliged him to sharing it and sharing it with those in need against any possession instincts in him. At the end he was left with just a little piece of it that he gave up only to view once more the magic of a full rainbow. 
Beautiful story!
I think of it every time I see a rainbow and I smile for his innocence and mine that I was wishing to have a piece of it as well! :-)

I hadn't before coming to Trondheim. If only my childhood fictional friend had known about it then I'm sure he would have asked for it and have been even more happy! :D

A couple of weeks ago we were very lucky with the weather. First everything turned into an old photo, the colours literally disappeared by a combination of heavy rain and sun! 
Look at this photo, I promise I have not touched it at all!

And then, then a double rainbow appeared in my other window! 
What a joy!
I was so very enthusiastic!!! I was breathing the moment, fully embodying it! :

But taking photos was not enough! I wanted to call somebody! To share this excitement! 
I restricted myself, though. 'Come on girl, who would receive such a call and not think you are naive?' :/


Well, well... to my further amazement I was so wrong! :
In different parts of Trondheim my rainbow people, all with so very different backgrounds and mentalities, were doing the same, too. 
Savouring the moment, trying to keep it and feeling the need to share it! :-)

I find this so spectacular as the double rainbow itself! I got really touched by the incident!

To the disappointment of the little girl I was, I never get a rainbow piece. The adult self of mine doesn't really care. She knows that is much more important to have a wonderful double rainbow moment to recall and in her life lovely rainbow people!  :-)

PS I won't add the 'Somewhere over the rainbow' song because this post risks to become overly rainbow-ish! :P (But secretly I highly suggest it! ) ;P

Maria's spinach pie

This is a dish that always, always gets praising that I lately decided not to be modest about and claim that I am excellent at making it. :-) 

Spinach pie is a traditional greek dish with limitless variations. I believe everyone involved in cooking has his/her own success recipe and the internet is full of them. My two pennies to this abundance is a tailor made one with ingredients easily found in norwegian market. I had to develop a new variation when I moved here which ended up being a completely different recipe compared to my mum's.
Several reasons for this; here the frozen spinach has a horrible amount of water in it, to use fresh one to make this pie will just increase the cost exponentially. The feta cheese, which may be in the filling, is again so very expensive that it's a complete waste to eat it in any other way but raw. Last but not least for the lazy me, you can find only one type of ready made dough that works compared to the three different types that are available in the greek market. Well, one can make his own dough but as I said I am too lazy for that.

So what you need for the filling;
Olive oil
Leek 1-2
Onions 1-2
Garlic
Champion mushrooms ( I'm afraid the amount is random but approximately a little more than half of this paper bag for  mushrooms)
Salt
Black pepper
Frozen spinach (1 or 2 packages, the pie in the pictures is made with 2)
Dill
Yogurt or rømme (300gr I use the greek yogurt in the 1kg box that comes from Sweden)

For the dough I use Kassandra filo that I buy from the ethnic shop close to Torget. The filo needs to be in room temperature and be removed from the plastic just before you put it on the oven pan. Otherwise either breaks if it is still frozen (big time)or gets dry and later tastes like paper if left standing in the air for too long.




Chop leek, garlic and onions and fry them in plenty of super hot olive oil. When golden and soft add the mushrooms cut in thin slices. If needed  use more oil. The idea is to fry them not to let them boil. When they change colour add the spinach frozen, salt, pepper and a good amount of dill. Let it cook for a while till the filling has turned into a thick but not dry mixture. The spinach should not really boil. Remove from heat and add the yogurt.



Oil a pan, apply the filo so that it covers the pan as in the picture above. Between each layer add some oil. Each filo must be in contact with some oil but be modest, otherwise it will get very heavy as a dish afterwards. Use a bit less filo that half of the package and then add 1/3 of the filling. Spread it evenly. Add a filo or two and pour the other 1/3. Add again 1or 2 filo. You can use all the broken pieces of filo in this stage. It doesn't really matter. If you realize that the filling is too liquid, use a bit more of filo or add in the filling a spoon of semolina to adsorb the extra water. 



Add the final portion of the filling, cover with the rest of the filo making sure you add a bit of oil if the filo has no contact with any liquid. Hide inside the pie the filo that it's on the sides of the pan. Apply the final one (for which you can save the most intact one). Use a bit of oil on the surface, too. Spread sesame seeds. Bake it in pre-heated oven at 180-200C for 30 -40 minutes? something like that. I usually put it first at the lower position in the oven and towards the end I place it higher.
